Grey, foothill, or ghost pine (formerly Digger pine)

Pinus sabiniana

This pine is known for its ghostly, pale silvery green needles and crooked black forked trunk, but should be better known for the delicious and amazingly healthful nuts it produces - 25% protein, a stunning amount for pine nuts. Toasted in oil, they are similar to store bought pine nuts but more flavorful. Grows in many parts of California, particularly around the Central Valley. Seeds require cold-stratification (refrigeration in sealed plastic bag with lightly moist vermiculite) for three months before planting.
